All our wines are produced from our Georgia Rabbit Eye Blueberries. We use several different varieties to produce the wines that are currently in production. The varieties of berries have different sugar content and we select the varieties and proportions to match a yeast that creates Sweet, Semi-Sweet, Dry, and Semi-Dry wines. All our wines are high in antioxidants. It takes almost a pound of berries to produce one bottle of wine.
Most commercial wines use sulfites to kill wild yeast and as a preservative. These sulfites are one of the major causes of headaches or hangovers after drinking commercial wines.
Our process uses heat to kill wild yeast, and we don't add sulfites to preserve the wine. Although our label says, "Contains Sulfites," it's because there are always some residual sulfites resulting from sterilizing and sanitizing the equipment used in the various wine-making processes.
