It all started with a gallon. Wine has always been our love but we had never tried our hands at making our own wine. On one warm summer evening while sipping a Chardonnay with friends, the talk drifted towards the chemistry of wine and how one would improve on grape wines. My curiosity took over and ideas were floated and we decided to experiment and make some wine. We had never done fermentation other than bread and pizza. So we searched the web and found a ton of information. Since no wine grapes were available, we used raisins and the wine turned out to be a hit among friends and family. This success led us to plant a variety of grape vines in the backyard. While the grape vines were growing, the chemist in me decided to experiment by making different types of wines besides grape wines. Since there are plenty of strawberries available during summer, strawberry wine was the obvious choice. We followed it up with peach, lychee, pineapple, mead, spicy mead, and finally mango wine.
