About Us:
Southold Farm + Cellar is a winery and vineyard that started on the North Fork of Long Island and that now exists in Gillespie County, Texas.
We are and always will be a winery whose sole mission is to make wines that speak of place and time, that thrill and delight our friends, family and ourselves.
Our winemaking decisions are dictated by what has happened during that season, not a set of pre-ordained “way of doing things.”
We rley heavily on our intuition and a bit of experience. Each fermentation, each wine is a learning experience, and we hope it always remains that way. And of course, all is for naught, if these wines don’t taste great. No fanatical dogma just the belief that less is better and that the important work begins and ends in the vineyard.
All of this means you should expect our wines to vary year to year, like individual children with their personalities, we hope our work tells the story of the vintage through each variety in each parcel.
Our process includes pigeage à pied or foot stomping, natural fermentations, lower levels of sulphur, as little movement of the wine as possible. We approach each wine based on its needs, and while we are not opposed to things like filtration or fining, you won’t see us implement these techniques unless it’s necessary for the wine.
As for this site, it is an attempt at transparency like our winemaking, which we hope to carry through into everything we do. And like the land, it is a work in progress, something that has and will continue to change over time.
